“Hacchan” is a foodie, born in Kagoshima, Japan who grew up with Shochu around and eventually became a Shochu Otaku travelling through Japan to find the best Shochu producers to collaborate with. As an inspiration for the HACHI range of Japanese Shochu, you may just find Hacchan on the label, enjoying a drink.THE HACHI SHOCHU, Kome Kasu (Rice), Cask Matured is a collaboration with Nakamoto Sake Brewery Co.,Ltd, located in Nara, Japan and with a history dating back to 1727. Traditionally producing Junmai, Junmai Ginjo and Junmai Daiginjo Sake, the fermented rice mash that remains after the Sake has been pressed out from the Moromi is called Kome Kasu aka Sake Kasu. A usual by-product of the Sake brewing process with an ABV of about 8 -13% the Kasu is then single distilled (making it a Honkaku Shochu) under vacuum pressure to retain the flavours of the underlying ingredient KOME (Rice) and then matured for about 7 years in a Refill Virgin Oak Cask to add layers of complexity to the original spirit.

Color:Very Light Straw/Pale Yellow
Nose: A sweet aroma of freshly cooked Japanese rice, mochi cream, fresh green apple, tropical fruits such as melon, guava, banana with undertones of honeycomb and grapefruit.
Palate: Initial sweetness, fresh vanilla, honey reminding us of the oak maturation balanced with fresh apricots, sour plums and dark chocolate to finish. Reminiscent of a fruity and dry sake.The flavours of KOME (Rice) are very much present along with the additional layers of flavours from cask maturation.
THE HACHI SHOCHU, Kome Kasu (Rice), Cask Matured は1727年より奈良で日本酒を造る中本酒造店とのコラボレーションにより誕生。中本酒造店は、伝統的な技法を習得した経験豊富な杜氏と蔵人たちにより吟醸規格で醸した酒造りをしています。手造りの良さを最大限に引き出し、品質を向上させるため、最先端の設備や技術も積極的に採用。本ボトルは、オーク樽に7年以上貯蔵。純米酒・純米吟醸酒・純米大吟醸酒の製造に使われた原料の上質なお米の米粕のみを利用し、原酒は味の層の深みのあるものに仕上がっています。ラベルの”八”の上に座る”はっちゃん”は鹿児島生まれの焼酎マニア。奈良でおいしいお米のお酒を発見して上機嫌。世界を旅する“はっちゃん”と一緒に乾杯!

Made from Grilled Kogane Sengan and Anno Imo, a fluffy delicious variety of sweet potato with a lovely aroma and golden skin color (Yaki Imo), Kuro (Black) Koji and single distilled under normal atmospheric pressure (making it a Honkaku Shochu) to retain the flavors of the underlying ingredient, this Batch 5 has been matured for about 2 years and 7 months in Mizunara Oak to retain the flavour of the original spirit while adding an extra dimension of complexity to the nose, palate and finish. Mizunara Oak is unique to Japan and is infamously difficult to work with, given their grain structure which also makes it more prone to leakages but imparts very unique flavours that are not usually found in traditional bourbon and sherry barrels.

Nose: Tropical fruits, incense, sandalwood, cedar and coconut with some subtle smoke balanced with sweet potato in the background.
Palate:Grated dry coconut, some banana and pineapple with a hint of oak spices, incense and sandalwood along with sweet potato flavours coming through at the back combined with subtle smoke.
THE HACHI SHOCHU, Sweet Potato (Imo), Mizunara Cask Maturedは 鹿児島県にある太久保酒造とのコラボレーションにより誕生。太久保酒造は関連会社に農業法人を持っており、高品質の原料を扱っています。ロゴの上に座るはっちゃんは 樽仕込みについての面白さに開眼。本ボトルは 焼いた黄金千貫&安納芋(さつまいも)と黒麹の発酵、本格焼酎ならしめる1回の常圧蒸留にて原酒(杜の妖精)は造られました。2年7ヵ月ミズナラ樽で熟成され、原酒の味わいは残しつつも、香り/ 味わい/ 余韻 に奥深さを与える仕上がりになりました。ミズナラ樽は日本独自の樽で 木目の構造より加工が難しく 漏れもよく起きると言われていますが バーボン樽やシェリー樽にはない特別な風味を与える樽です。世界を旅する はっちゃん と一緒に乾杯!

Made from Kogane Sengan, a fluffy delicious variety of sweet potato with a lovely aroma and golden skin color and single distilled under normal atmospheric pressure (making it a Honkaku Shochu) to retain the flavors of the underlying ingredient, this Batch 1 is a vatting of 90% matured for about 2 years and 10% matured for about 2 months in Virgin Oak to retain the flavour of the origin spirit while adding an extra dimension of complexity to the nose, palate and finish.

THE HACHI SHOCHU, Sweet Potato Imo, Cask Maturedは鹿児島県にある太久保酒造とのコラボレーションにより誕生。太久保酒造は関連会社の農業法人から仕入れる厳選された原料だけを利用できるクラフトスタイルの酒蔵です。原料の”黄金千貫”由来のどっしりとした味わいを最大限に発揮する常圧蒸留による昔ながらの製法。本ボトルは、香りから舌触りまで飲む人をうならせる奥行きのでるよう、バージンオーク樽2年貯蔵の原酒90%に2カ月貯蔵の原酒を10%合わせてバランスよく仕上げました。フレッシュ感やスパイスの香りも感じるような酒になっています。

THE HACHI SHOCHU, Barley (Mugi), Cask Matured is a collaboration with Miroku Shuzo, a family owned craft distillery in Oita, Japan and Hacchan who, somewhere along the way was also exposed to Whisky and the benefits of Cask Maturation. Made from local barley grown in Kitsuki and Usa (both near the distillery in Oita) and single distilled under normal atmospheric pressure (making it a Honkaku Shochu) to retain the flavors of the underlying ingredient, this Batch 1 is matured for about 2 years in ex-Sherry (oloroso) Hogsheads from Andalusia Jerez to add layers of complexity and flavour to the original spirit.

THE HACHI SHOCHU, Barley (Mugi), Cask Matured は大分県にあるみろく酒造とのコラボレーションにより誕生。みろく酒造は造りと地元の原料にこだわるクラフトスタイルの酒蔵です。酒蔵に近い杵築市と宇佐市で作られた麦を利用し、原材料の特徴を最大限に生かす単式常圧蒸留で作られています。本ボトルは、原酒の良さを残しながらも奥行きのでるよう、スペイン南部アンダルシア州へレスで使われていたホグスヘッドのシェリー樽(オロロソ)で2年貯蔵。ドライフルーツの香りと甘くスパイスを感じる味に仕上がっています。

THE HACHI SHOCHU, Brown Sugar (Kokuto), Cask Matured is a collaboration with Yayoi Shochu Brewery LPC, a family owned craft distillery established in 1922 and one of the oldest on Amami Oshima Islands of Kagoshima in Japan and Hacchan who, somewhere along the way was also exposed to Whisky and the benefits of Cask Maturation. Made from brown sugar sourced from various producers in Okinawa and Thai Mai (Thai Rice) White Koji and single distilled under normal atmospheric pressure (making it a Honkaku Shochu) to retain the flavours of the underlying ingredient, this Batch 1 is a blend of 3 – 5 years Kokuto Shochu aged in refill/recharred virgin American White Oak casks to add layers of complexity and flavour to the original spirit.

Nose:Intricate nose of sugarcane like sweetness, fresh fruits like green apples, pear and mint balanced with subtle salted caramel and some oak spices.
Palate:Initial sweetness gently gives way to some savoury, umami like notes with a finish of pepper, spices and a hint of dark chocolate.
THE HACHI SHOCHU, Brown Sugar (Kokuto) , Cask Maturedは鹿児島県奄美大島にある弥生焼酎醸造所とのコラボレーションにより誕生。弥生焼酎醸造所は1922年創業、奄美大島でももっとも古い蔵で、樽貯蔵の黒糖焼酎を作っています。黒糖焼酎を作る上での上質な米麹づくりに適しているタイ米と沖縄の島々から調達した黒糖を使い、常圧で蒸留。本ボトルは、アメリカンホワイトオーク樽に3年から5年貯蔵した黒糖焼酎をブレンドして、原酒の味の層や奥行きを感じる味に仕上げています。

THE HACHI SHOCHU, Umeshu, is a collaboration with Ookubo Shuzo, a family owned farm distillery in Kagoshima and Hacchan, who has been singularly focused on showcasing Shochu, a hidden gem from Japan by offering a unique combination and layers of flavors overlaid on the original spirit. This Umeshu is another such example and is a combination of Koshu Yaki Imo Shochu (made from baked Kogane Sengan, a fluffy delicious variety of sweet potato with a lovely aroma and golden skin color and baked Annou Imo, a naturally sweeter variety of sweet potato with a yellow flesh and high viscosity), Kuro (Black) Koji and single distilled under normal atmospheric pressure making it a Honkaku Shochu) which has been aged for over 10 years (i.e Koshu) and some delicious Kanjuku (i.e. ripened) Nanko (refers to the variety) Ume (plum) from Kagoshima.

Palate:Initial sourness of the Ume along with the sweetness and the syrupy texture takes us back to our childhood memories of fruit jelly snacks with the shochu in the background and a lingering fruity flavor to finish.
THE HACHI SHOCHU, Umeshu(梅酒)は鹿児島県にある太久保酒造とのコラボレーションにより誕生。太久保酒造は関連会社の農業法人から仕入れる厳選された原料だけを利用できるクラフトスタイルの酒蔵です。特別にボトリングしたこの梅酒は、10年以上貯蔵された安納芋と黄金千貫の焼き芋焼酎(常圧蒸留・黒麹)に鹿児島産の完熟の南高梅を浸漬してゆっくり丁寧に作りました。洗練された上品な甘さの梅酒に仕上がっています。
